Taste characteristics

This is a Junmai Ginjo undiluted sake brewed using pesticide-free "Hitogokochi" sake rice grown using the Aigamo farming method. While most sakes have a fruity, mild aroma and a gentle umami and acidity, this one has a rich, powerful flavor. This is a Junmai Ginjo brewed with the utmost care and attention by the highly skilled brewers at a brewery with a 200-year tradition.

Food Pairing

It pairs well with well-seasoned dishes that complement the umami of the rice and the strength of the undiluted sake.

Simmered dishes: Nikujaga (meat and potato stew), simmered fish, braised pork cubes, etc. (these go well with the rice flavor of sake)

Grilled eel: The richness of the sauce matches well with the richness of the sake.

Grilled fish: Salt-grilled salmon, dried fish, etc. (Sake brings out the umami of the fish)

Sashimi: You can try a wide range of fish, from mild ones like squid, scallops, and sweet shrimp to lean fish.
In particular, sashimi with a moderate amount of soy sauce may be good, as it has been praised for its "brightly umami flavor."
