Taste characteristics
This is a completely new type of sparkling sake made with ancient rice (black rice). Its taste is somewhere between sake and wine, with a refreshing gassy feel and low alcohol content (12 or 14%), making it easy to drink. It also has a distinctive red color derived from the ancient rice. Given these characteristics, it pairs well with both Western and Japanese cuisine, but we especially recommend it with dishes that go well with sparkling wine or vibrant sake.
Food Pairing
Aperitifs and appetizers: The refreshing sparkling wine will refresh light dishes and oily foods.
Seafood: Raw oysters (with lemon, etc.), seafood carpaccio, salmon roe (also used as an appetizer for Japanese cuisine), marinated scallops and turnips
Western-style snacks: cheese (especially creamy and fresh), prosciutto, and caprese
Salad: A salad made with light ingredients
